Well, it's the final few hours of the challenge and I must admit that I'm craving fruit, or anything that isn't beige to be fair!! Having pasta twice a day, got to me around Thursday and by Friday I could no longer stomach it, so have been eating more beans and porridge from my allowance. I'm very glad I've done this challenge as it's made me appreciate the variety of foods that I am able to afford, consume and generally waste on a weekly basis. In future I'll be more aware of the money I spend unnecessarily. Thank you all for your support.

Well, I have just made up a few pots of pasta with passata and chopped tomatoes, enough to last until Wednesday evening, when I will be having beans for my tea. Porridge is soaking and I'm ready to go!!! Might be living on baked beans and plain pasta by Saturday!!!

I have done my shopping in preparation for the £1 per day challenge. I was shocked and horrified at the types of food that I could not afford to buy. No fruit and vegetables as they would have taken up too much of the budget. Looks like it's pasta and oats for 7 days! Going to try and make it as colourful as possible with the sweetcorn and the tomatoes. Thank you for your support so far. Will keep people updated to the challenges that will be encountered mentally and physically throughout the week.
