Antica - an artisanal microbakery in Portsmouth

The word ”Antica” means ancient in romanian language. It refers to the methods used to produce the bread and other goods which will be available in the microbakery, all done through a process of fermentation. I also focus on an aray of ancient grains to bake up a more healthy gut life style for the community of Portsmouth.

The circle in the logo represents “going back to the roots“, where and how baking all started using 3 ingredients : salt, water and flour.

Of course, as a starting home baker, having the funds for all the tools needed is challenging. I have been adviced to try crowfunding in the hope to raise the necesarry funds for a bread oven as baking from my little domestic oven won’t be enough to sustain this idea.

All the produce is organic and local, stoneground flour, and I work only with other people who share the idea of “atention to detail and less is more”.

We have an increasing demand of gluten free bread and people who avoid gluten thinking that it is something bad. However, I would like to open Antica and help the community understand that gluten is not bad and bread is good for you. If treated the right way and if supplied with the corect ingredients, you have the making of an amazing meal. I also do this to support artisanal millers and mills who need more bakers to help them strive in the society. We need each other for a more productive and healthier way of life.
